Veggie puffs (for 6 pieces)
1 sheet frozen pastry sheet (I used Trader Joes frozen puff pastry sheets)
Cumin seeds – ¼ tsp
Onion – ½ medium – finely chopped
Potatoes (boiled and slightly mashed) – 2 medium
Corn – ¼ cup
Chopped sweet bell pepper – ¼ cup
Red chilli powder – ½ tsp (or per taste)
Salt to taste
(You can use any other combinations of vegetables – I used these because I had them handy)
Preheat oven to 400 and follow the instructions to thaw the required amount of pastry sheet(s). (for 10 mins)
Meanwhile, get the filling for the puff ready- heat oil, add the cumin seeds, onions and cook until translucent. Now add the potatoes, corn, sweet bell pepper with the red chilli powder and salt. Fry for a few mins. Let cool
Cut the pastry sheet into 6 pieces. Put a little of the filling into each and fold and stick edges together with fingertips. Place on a baking sheet lined with a little butter. (you could glaze the puffs by beating one egg and use a pastry brush to egg-wash them).
Bake for about 20-30 mins or until golden brown, crisp, and cooked through.
